Nicky Cornet, Executive Head Chef
Nicky has worked in acclaimed establishments such as Montpeliers and Jacksons in Edinburgh. Through his recent role as Executive Head Chef at The Papermill Lasswade, The Craigie Hotel and The Secret Herb Garden, he feels he has a great understanding of what Midlothian restaurant customers like to eat. His role at The Kitchen sees him developing the thriving restaurant team, ensuring the best quality of dishes and so providing a memorable dining experience in The Kitchen.
Asha Banerjee, Wedding & Events Assistant Manager
Whilst studying at university in Edinburgh, Asha worked as a waitress in Wagamama for four years where she discovered her love and passion for hospitality. Following her degree, she joined The Scotsman Hotel as a hostess in The Grand Cafe, where she quickly moved up to be a Restaurant Supervisor and then Assistant Restaurant Manager. Having run and coordinated weddings and events during her time at The Scotsman, Asha decided to pursue this as a career and is now Wedding and Events Assistant Manager at Restoration Yard.
Joanna Romanska, Front of House Manager
Joanna previously worked at the Dome in Edinburgh. She loves working in the surroundings of Dalkeith Country Park, being around nature and away from the ‘city jungle’. She feels privileged to be part of such a friendly team and working in such a lovely place. Joanna’s role sees her look after day-to-day service, staff training and she enjoys learning new things every day.
