Meet The Kitchen’s New Head Chef | Jose Dalto

The Kitchen is a gorgeous light-filled and spacious restaurant with stunning panoramic views of the estate and historic Orangerie. It is an idyllic place to eat to enjoy brunch or lunch all day, indoors or on our outdoor terrace. You’ll find child-friendly options and something tasty whether you’re vegan, vegetarian, gluten free or dairy free.

The Kitchen recently welcomed new Head Chef, Jose Dalto, to the team. He brings a wealth of experience and fresh ideas to The Kitchen. Come and take a look at the recently launched new menus and find out more about the chef behind The Kitchen’s new dishes.

Did you always want to be a chef?

No, I never thought I would be a chef. I was studying Law in Brazil before I came to Scotland. When I got here I couldn’t speak any English so I ended up in a kitchen washing dishes and that’s where I fell in love with cooking.

Are there chefs that have inspired you along your journey and what did you learn from them?

Of course, every chef I’ve worked with taught me something. There is one thing you need to know in the kitchen and that’s to be a team player.

What are you most looking forward to in your new role in The Kitchen at Restoration Yard?

I’m always looking for ways to improve the guests experience at the same time creating an environment where the team wants to be.

Can you give us a little insight into creating and exciting seasonal menu in The Kitchen? What is your process?

First we choose the main ingredient of the dish depending on the season, we then match it with other ingredients. When we are happy with the dish, we think about all the textures and presentation.

Will you be incorporating local produce into the new menu?

Definitely, we are always looking to support the local businesses.

What is your vision for The Kitchen and how will you make it happen?

Our vision is for the food to match our amazing surrounds, we want people to come and enjoy the park and the food. The only way to make it happen is to work hard and being consistent.

How easy is it for you to switch off from your profession?

I’ve learned to switch off and dedicate some time to myself and my family. I find pretty easy to just switch off and enjoy life outside work.

Which restaurants would you say are your go-to’s for helping with your own creativity?

I get most inspired when travelling abroad, for me it helps not having any great expectation and all of a sudden you are presented with something fun, different and tasty.

How would you define the perfect dining experience when eating out?

With my family by the beach, watching the sunset over some fresh seafood platter and a nice glass of wine. It’s always special for me.

Currently, what is your favourite dish from the new menu?

I do like the French Toast, you can have it anytime of the day and will always make me want more.
